CoachMe-Healthy Brownie

Ingredients

1 cup unsweetened apple purée or sauce (I use a tin of apple sauce)

1/3 cup cocoa powder

3/4 cup self-raising flour

1/2 teaspoon baking soda

1/4 cup sugar

1/2 teaspoon salt

1/2 cup dark chocolate chips

3/4 cup (70g) walnuts, chopped

 

Directions

Step 1            

Preheat oven to 175°C and line a 20x20 cm baking dish with baking paper.

Step 2           

Place apple purée in a medium-sizedbowl. Sift in cocoa, flour and baking soda.  Add sugar and salt and mix until just combined. Do not over-mix as this will  toughen the brownies. Gently folding chocolate chips and walnuts. Transfer to prepared baking dish and bake for about 25-30 minutes or until the centre feels set and fudgy when a skewer is inserted.

Step 3  

Cool in dish for 5-10 minutes before turning out. Cool completely before slicing in squares.

Bliss Balls

Ingredients

2 cups raw cashews
1/2 c pumpkin seeds
4 T cacao powder (can use cocoa powder as an alternative. organic cocoa would be great)
4 medjool dates, soaked in boiling water for 5 minutes, drained or 6-8 normal dates
3 T pure maple syrup or honey
1 t vanilla essence
desiccated coconut for rolling

 

Directions

In a food processor combine all the ingredients above apart from the coconut. 

The mixture should be nice and moist, if not just add a bit of the water from soaking the dates. 

Once the correct texture is found, using wet hands simply use a teaspoon to measure out the correct size and roll into coconut. 

Place in the fridge for 1/2 hour to set and then enjoy! 

I find by placing 1/2 the prepared bliss balls into the freezer, it prevents me from over indulging ;)

Cashew Cream, 2 ways

Ingredients

Sweet:
1 cup raw cashews
1/4 cup rice or soy milk
1/2 tsps vanilla extract
2 tsps maple syrup
Dash of cinnamon and nutmeg

Sour:
1 cup raw cashews
Juice of 1/2 lemon
1-2 tsps apple cider vinegar
A pinch of sea salt
1/2 cup unsweetened nondairy milk or water

 

Directions

Soak cashews in water for 2 hours.
Drain and add to a blender or food processor with all other ingredients.
Blend until well combined.
Taste and adjust as necessary.

 

Notes

Use the sweet cream on top of puddings or mashed yams.
Use the sour cream in the place of regular sour cream.
